Quick and Easy Frittata (Bacon & Egg Loaf)

This is one of the quickest, easiest and tastiest low carb recipes ever! Uses only 1 bowl and 1 loaf tin (so quick clean up too!)
My Mum used to make this for us when we were kids and I have always loved it. Now I make it for my family and it's a crowd favorite. I hope you and your families enjoy it too!


Low carb still means eat your veggies!



Ingredients:
6 eggs, beaten
1/2 cup cheddar cheese, grated
1 zucchini, grated
4 slices of bacon, chopped
1/4 brown onion, finely chopped
3 Medium mushrooms, sliced
1/4 cup red bell pepper, chopped
1/2 cup spinach, sliced
1 garlic clove, chopped or crushed
1 Tbsp butter, melted

Directions:
1. Heat oven to 350F (180C).
2. Mix all ingredients together in a bowl.
3. Place mixture into loaf tin and bake for 25 minutes.
4. Enjoy!
